We've really been trying to eat at home more, and in the process, I realized we need to do a slightly better job at menu planning, since we've been to the grocery store about 8 times in the last two weeks. No big trips, mind you, but $5 here, $10 there, a gallon of milk, one onion, etc. So a couple of nights ago, we sat down, planned out the week, cross-referenced the pantry and the fridge and made a trip to Kroger. Other than milk and fruit, which I like to buy fresh, we might be grocery-shopping-trip-free till next week!
So, without further ado, this week's menu!
Sunday - Pork chops with cream sauce, rice, maple carrots - this is Faith's absolute favorite meal. Brown the porkchops in a pan, then transfer to a baking dish. Mix together a can of cream of mushroom soup, a can of milk, and powdered ranch dressing (really!), and pour it over the chops. Bake at 350 for about an hour or so. For the carrots, bring carrots to a boil, then simmer till desired texture (F&B like them soft). Remove from the heat, drain, and add a pat of butter and a few teaspoons of maple syrup. Stir to coat, then let stand for a couple of minutes to let the syrup soak in.
Monday - Crockpot lasagna, garlic bread (new recipe)

Wednesday - Layered meatball bake with stuffing (new recipe)
Thursday - Beef stew & potatoes in the crockpot
Friday - Enchilada casserole with refried beans - another favorite, link is where I'm trying to catalog favorite recipes
Saturday - Stuffed baked potatoes for after church
I also just baked a fresh batch of devil food cupcakes that we can use for desserts this week, and I have two bananas that are just the right condition for banana bread, so hoping to make some of that too.
