Nestle Lean Cuisine Skinny Cow Creative Sides Lunches #frozenfavorites

One of the main reasons we actually live on post is so that the husband can come home for lunch.  Since his commute really is that short (under 7 minutes), he can come home, eat, and make it back to work with plenty of time to spare.  We also figure that we are saving a ton of money by him not eating fast food or at the cafeterias, since he prefers warm foods for lunch.  The occasional sandwich will do in a pinch, but he'd much rather come home and have leftovers, soup, or fried rice.

Lunch! And I got to use my pretty new chopsticks from a friend.

So getting to try out the Nestle Lean Cuisine Italian Favorites 4-Pack and the Asian Flavors 6-pack sounded like a great idea.  There are some days where he's quite limited on time for lunch and these could be a great fit on those days.

I headed to Sam's Club to purchase the Lean Cuisine frozen meals, along with Skinny Cow Ice Cream Sandwiches.  Everyone needs a treat now and then, and the Skinny Cow snacks are low fat too.

We did a test sample of the Asian Flavors and I played around with a few ideas for creative side dishes.  My first go-to was soup, but the husband mentioned that he really could go for a salad, so I went to work on one that matched the Asian flavors.  He had chosen the ginger-garlic stir fry with chicken meal, so complementary was imperative.

A simple, creative side, when time is of the essence.

Since I knew we had assorted Asian sesame dressings, I started with a base of regular lettuce--iceberg or romaine works well.  I added toasted almonds, sesame seeds, and slices of mandarin oranges, topped with Asian dressing.  For work days, side dishes also need to be simple and quick to prepare for us!  We both thought the combination was tasty and different from a regular salad.  The sweet oranges were amazing with the sesame dressings.
